Mmmm...cupcakes
I had the good fortune of sharing a most delicious coconut cupcake with three co-workers at lunch today. I swear it was the best cupcake I've ever had--literally.
Coconut pound cake (with shredded coconut in the buttery cake) with a not-too-sweet whipped icing with lots of shaved coconut. Mmmm.

Life is so unfair ;-)
I'll have to try some baking soon--coconut pound cake rules. That and a pina colada and you've got a vacation on your hands!
